It is my pleasure to share with you my cleansing soup recipes. For years these recipes were in my head and not on paper, clients would ask me continuously for them. One snowy wintery weekend I buckled down and figured out the measurements to concoct the recipes. These are delicious and satisfying soups that are good for cleansing, mealtime or snacking and they are good for the soul! ENJOY!

SOUP RECIPES

"Cream" of Spinach Soup

  • 1 large onion
  • 6 cloves of garlic
  • 2 tablespoons of olive oil
  • 12 cups of broth-vegetable,chicken or turkey
  • 1 head of cauliflower
  • 1 large bunch of broccoli
  • 1 lb. baby spinach
  • 1 bunch cilantro
  • sea salt, cayenne and garam masala (you can get this at Food Works in the bulk food section)

- Chop onion and garlic and saute in oil in a large pot
- Add broth
- Chop cauliflower and broccoli and add to broth-cook till soft -20 minutes
- Add spinach and cilantro -only cook for 5 mins. - don't over cook
- Add the garam masala 1 teaspoon at a time-too much will over power the soup. The garam masala really pulls the soup together.
- Season with sea salt and cayenne to taste
- Blend with immersion blender
- ENJOY

Carrot Ginger Soup

  • 1 large onion
  • 2 Tablespoons olive oil
  • 2 lbs. carrots
  • 1 large sweet potato
  • 1/2 head of cauliflower
  • 12 cups of broth-vegetable,chicken or turkey
  • 1 can light coconut milk
  • 1/8 cup of finely chopped ginger
  • sea salt
  • cayenne

- Chop onion and saute in olive oil in large pot
- Add the broth
- Chop the carrots, sweet potato, and cauliflower- add to the broth-cook till soft
- Add coconut milk
- Add ginger
- Blend with immersion blender
- Season with sea salt and cayenne

Beet-Fennel-Ginger Soup

  • 3 cloves of garlic
  • 3 large beets
  • 1 head of cauliflower
  • 2 bulbs of fennel-trimmed
  • 5 Tablespoons chopped ginger
  • 12 cups of broth-vegetable,chicken,or turkey
  • 1 lemon

- In a large pot add the broth
- Chop beets, garlic, cauliflower and fennel
- Cook till soft
- Blend and add the juice of 1 lemon
- Season with sea salt to taste

Butternut Squash - Apple Soup

  • 12 cups of broth
  • 1 large onion
  • 2 Tablespoons olive oil
  • 4 cups of butternut squash
  • 1/2 lb of carrots
  • 1/2 head cauliflower
  • 3 granny smith apples-cored
  • sea salt
  • cayenne
  • cinnamon

- Chop onion - saute in large pot
- Chop butternut squash, carrots,apples and cauliflower-add to broth
- Cook till soft
- Blend with immersion blender
- Add sea salt, cayenne and cinnamon to taste
